First one mission is good, i have all controls but 2nd or 3rd mission i have lost retarder function and sometimes engine brake. When i change hotkeys for retarder it still doesn't work. (lever don't move) What i have tried: 1. Copying controls from other profile - doesn't work 2. recreating new profile - doesn't work 3. Reinstalling the game

When I used to play UK Truck Simulator, I used the outside view, because I actually wanted to see my truck, but found that control of my truck was pretty poor. Then when I switched to ETS2, I tried the in-cab view, and my handling improved massively, plus like Ryu, it gives a more immersive feeling.
So I've never driven a "real" European truck, but I cant imagine that they would be so different from American trucks that their retarder control would be located where the trailer brake is located. Uncheck the option to use the retarder automatically, and make sure you decrease it till you turn it off. By default, semicolon (;) turns retarder on, single quote (') turns retarder off. The retarder uses your transmission to slow the truck down, hence the whirling sound you hear with the retarder engaged. Typically it is used to maintain your speed going down hills to prevent the truck from accelerating to an uncontrollable speed. In real life, you would use your retarder to limit the amount of speed your truck picks up.
Each of the trucks now has a choice of transmission, one without a retarder and one with a retarder. I've tried the retarder in-game and it's not really useful. It's too strong of an effect so it's hard to control and there really aren't enough big hills that you could actually use it on. I find that the motor brake (jake brake) is more useful.

Motor Brake: Stopping in traffic or for extreme braking cases on highways etc. Retarder: Coming to a new speed limit, exiting highway, slowing over a long distance (going to a fuel station, parking, etc.) Parking Brake: Stay still at traffic lights, parked, only for when I won't need to move for a bit. The exhaust brake is generally activated during braking or manually by a separate control (generally a button on the floor). The retarder is a more powerful version that holds the engine back when desired speed is exceeded (on hills and the like). Retarders work against the engines pistons, forcing them to slow.
